Alta Langa DOCG Bianco TORELLI

Alta Langa DOCG is the Classic Method sparkling wine of Piedmont. A denomination that has its roots in the mid-nineteenth century in the Cantine di Canelli where the production of sparkling wines began with the method of refermentation in the bottle.                                                                                                                                                   The controlled and guaranteed designation of origin "Alta Langa" is exclusively reserved for the production of sparkling wines produced in an area between the provinces of Cuneo, Asti and Alessandria, obtained by refermentation in the bottle, in white or rosé version and exclusively vintage.                                                                                                                                                                                                          Our Alta Langa Bianco is made from 70% Pinot Noir grapes and 30% Chardonnay grapes, with a stay on the lees of over 30 months and is marketed in  the extra brut  version with a residual sugar between 4-5 g/l.                                                                                                                                                         The structure of Pinot Noir, the elegance and finesse of Chardonnay and the long aging on the lees are the secret of these complex, refined bubbles rich in surprising freshness.

    Colour

    This sparkling wine displays a bright straw-yellow colour with abundant, persistent foam and an exceptionally fine, long-lasting perlage, creating an elegant and inviting appearance in the glass.

    Aroma

    On the nose, it offers an intense, deep and beautifully enveloping bouquet. Rich aromas of toasted dried fruits are complemented by delicate notes of freshly baked bread crust, reflecting the complexity developed through traditional bottle ageing.

    Taste

    The palate faithfully mirrors the aromas found on the nose, delivering a full-bodied and enveloping flavour with remarkable harmony and balance. Crisp acidity provides freshness and vibrancy, while the wine's refined structure and subtle savoury character create a long, elegant finish.

    Alcohol Content

    This wine has an alcohol content of 12–12.5% ABV, providing excellent balance between freshness, structure and drinkability.

    Cellaring

    For the best expression of its freshness and elegance, this sparkling wine is recommended to be enjoyed within five years of disgorgement.

    Serving Temperature

    Serve chilled between 10–12°C to fully appreciate its delicate aromas, fine bubbles and balanced flavour profile.

    Food Pairing

    Perfect as an aperitif, this wine pairs beautifully with savoury appetisers and traditional seafood starters. It is equally at home alongside Italian antipasti featuring a selection of cured meats. For main courses, it complements dishes such as saffron risotto, seafood spaghetti and gnocchi with scampi sauce. It also pairs wonderfully with fish dishes, including mixed fried seafood and vegetables, as well as white meats such as roast rabbit. To finish, it is an excellent companion to a range of cheeses, particularly the renowned Roccaverano DOP.

    Only 3,000 bottles were produced from the 2021 vintage, making this an exclusive expression of traditional Italian sparkling winemaking.
