Dolcetto d'Asti D.O.C. "Il Rocchetto"
Dolcetto is a Piedmontese grape variety par excellence, grown in Italy almost exclusively on the hilly strip south of the provinces of Cuneo, Asti and Alessandria. For the winemakers of this area it was the red wine par excellence. It prefers marly-calcareous soils and has found its territory of choice on the hills of Langa and Monferrato.
The "Rocchetto" comes from our vineyards on the hill of San Grato di Bubbio and is obtained with a very traditional methodology with long maceration that lasts the entire period of alcoholic fermentation (10, 15 days depending on the vintage).
After racking, the wine is kept at a temperature close to 20 °C to facilitate the completion of malolactic fermentation.
At this point, after a few rackings, it is taken to tanks outside the cellar where the cold winter temperatures stabilize the wine. At the end of the following spring or at the beginning of summer, bottling takes place and the Dolcetto d'Asti "Il Rocchetto" is ready after two months for consumption.

Colour
This Dolcetto d’Asti displays a bright ruby red colour with delicate violet reflections, giving the wine a youthful and inviting appearance.
Aroma
The bouquet is pleasantly vinous and fruit-driven, with fresh red fruit aromas and a soft, approachable character.
Taste
On the palate, the wine is fruity, dry and harmonious, with a gentle almond note on the finish that is typical of the Dolcetto grape. It is well balanced, easy to drink and full of authentic Piedmontese character.
Alcohol Content
The alcohol content ranges from 12–14% ABV, depending on the vintage.
Cellaring
This wine is generally best enjoyed while young, when its fresh fruit flavours are at their most vibrant. However, it can also develop pleasantly with a few years of bottle ageing.
Serving Temperature
Serve between 16–18°C.
Food Pairing
This is a versatile red that can be enjoyed throughout the meal. It pairs particularly well with traditional Piedmontese appetisers and savoury pasta dishes such as tagliatelle, ravioli and agnolotti served with meat sauce. It also complements stewed white meats and a wide range of red meat dishes, with the exception of game.
